How long can you keep food above 175 degrees?
According the the USDA, holding food at 175 degrees Fahrenheit or above will keep food in the "danger zone" where bacteria multiply quickly. It is recommended that you don't keep food in this temperature range for more than 2 hours. Any food that has been in this temperature range for longer than 2 hours should be discarded.
