The optimal temperature range for active dry yeast is between 35-48°C (95-120°F). Temperatures around 48-57°C (120-135°F) can severely injure yeast cells, while temperatures above 59°C (140°F) generally kill them. Therefore, active yeast is killed typically around 59°C or higher.
