How do you mascavate?

Here is the process of making muscovado sugar

1. Harvest the sugarcane. Sugarcane is harvested when it is mature, which is typically around 12 months old. The stalks are cut down close to the ground, and the leaves are removed.

2. Crush the sugarcane. The sugarcane is then crushed to extract the juice. This can be done using a variety of methods, including manual labor, animal power, or mechanical crushers.

3. Clarify the juice. The juice is then clarified to remove impurities. This can be done by heating the juice, skimming off the foam, and then straining it through a cloth filter.

4. Boil the juice. The clarified juice is then boiled in large pots. This causes the water in the juice to evaporate, leaving behind the sugar crystals.

5. Cool the sugar. The sugar is then cooled and allowed to crystallize. This can be done by pouring the sugar into molds and letting it cool at room temperature, or by using a vacuum cooler.

6. Dry the sugar. The crystallized sugar is then dried to remove any remaining moisture. This can be done by spreading the sugar out on a flat surface and allowing it to dry in the sun, or by using a mechanical dryer.

7. Pack the sugar. The dried sugar is then packed and sold to consumers. Mascovado sugar is typically sold in bags or boxes, and it is often labeled as "brown sugar" or "unrefined sugar."
