How to Make Low Fat Mayonnaise (8 Steps)

Things You'll Need
- 2 cup water
- 1 tbsp. corn starch
- Medium-sized pan
- 1/2 cup low-fat cottage cheese
- 1/4 cup olive oil
- Large bowl
- 1 tbsp. apple cider vinegar
- 1 tsp.table salt
- Airtight container
Instructions

Pour 2 cups of cool water and 1 tbsp. corn starch into a medium-sized saucepan.

Stir the ingredients until they are well incorporated and bring the mixture to a boil on high heat.

Continue to boil the mixture for 2 to 3 minutes and remove the mixture.

Pour 1/2 cup low-fat cottage cheese and 1/4 cup olive oil into a large bowl.

Stir the ingredients and add 1 tbsp. apple cider vinegar and 1 tsp. table salt.

Pour the water and corn starch mixture into the bowl. Stir the ingredients until they are incorporated.

Spoon the mixture into an airtight container and refrigerate for 24 hours. This will allow the mayonnaise to become more firm.

Refrigerate and enjoy the low-fat mayo for up to one week.
