What is sweet sake?

Ama sake or kanzake, also known as mirin sake or mirinsake, is a sweet variety of sake. As its name suggests, it is commonly used as a cooking wine, especially for making teriyaki sauce. It has a relatively high alcohol content of around 14%. Most Ama sake is made with white rice, but some are made with brown rice.

Ama sake can also refer to a type of amazake, a fermented sweet non-alcoholic beverage made from rice malt instead of rice.
