How to Make Holiday Wassail

The winter holidays signal the season for wassail, a spiced cider punch with venerable origins. The word wassail comes from the Anglo-Saxon phrase "waes hael" meaning "good health," which was used as a toast. Wassail is usually prepared in a communal bowl to share with guests; indeed, it's the act of sharing that truly makes the concoction a wassail.

Things You'll Need

  • Stockpot or similar tall, deep pot
  • Ladle
  • Mugs or heat-resistant glass cups
  • Apple cider
  • Cranberry juice
  • Cinnamon sticks
  • Cloves
  • Allspice berries
  • Ground ginger
  • Nutmeg
  • Star anise
  • Brown sugar

Instructions

  1. Combine apple cider and cranberry juice in a large, tall pot set over a medium flame. Use three to six times as much cider as juice.

  2. Add whole spices -- cinnamon sticks, star anise, cloves, allspice berries -- to taste. Add ground ginger and nutmeg, preferably fresh-grated, as well. Add sugar to taste; you may not need any at all depending on the tartness of your juices.

  3. Simmer the mixture for up to three hours. Ladle into mugs or punch cups and serve warm.
