Does sugar cause drinks to fizz?
Sugar, on its own, does not cause drinks like sodas or sparkling waters to fizz. The fizz in these beverages comes from the addition of carbon dioxide (CO2) gas. To create the bubbles and fizzy effect, CO2 gas is dissolved under high pressure into the liquid, and when the container is opened, the pressure is released, causing the gas to form bubbles and rise to the surface. The process of injecting carbon dioxide into beverages is called carbonation.
