How do you dehydrate milk?

Ingredients:

* 1 gallon whole milk

* 1/4 cup honey, if desired (adds a bit of sweetness)

* 1 packet dry yeast

* Optional spices: cinnamon, vanilla, nutmeg, etc. to flavor the milk

Instructions:

First Steps

1.) Pour one gallon whole milk into a heavy-bottomed stock pot. Bring the milk to a simmer over medium-high heat.

2.) Turn the heat down to medium-low and simmer milk until a thin layer of skin forms over half of the surface.

3.) Stir the milk every 5 minutes to prevent the skin forming at the top from sticking. As it simmers, the milk solids will float to the top.

4.) If you want a sweetened dehydrated milk, add 1/4 cup of honey to the pot.

Drying Milk with Yeast

1.) Whisk in 1 packet of dry yeast and any desired spices. The milk should be warm to the touch, not hot. You never want to kill the yeast.

2.) Stir for a minute or two to fully incorporate.

3.) Let sit for 5-10 minutes so the yeast can fully hydrate and begin to grow. Milk will cool off a little bit more.

Dry the milk

1.) Pour the milk mixture onto shallow baking sheets without a rim.

2.) You may need two pans depending on how big they are. Pour mixture into about 1" deep so it will dry fully.

3.) Place in the warm oven at 150 degrees Fahrenheit.

4.) Dry milk for 8 to 16 hours, or until fully dry. Milk will begin to darken as it dries, this is normal. When fully dried, the milk should be in the bottom of the pan and easily removed. This is fully dehydrated milk.
