How to Measure a Dash of Bitters
Bitters is a plant-derived spirit used to flavor cocktails such as the Manhattan, the old-fashioned and the martini. Arguably, making a good cocktail is an art and not a science. As with food, individual preferences color our perception of drinks. However, guidelines are helpful when faced with measuring an ingredient like bitters, which is used in small amounts with dubious instructions like "just a dash."

Measure a dash into a measuring cup. A universal measuring cup with markings for various measurements will work best. A bartender's dash is approximately 1/32 of an ounce.

Follow the directions in your drink recipe with regard to when and how to add the dash. Some drinks may require that you add the dash at the end; some may require that you add it in between adding the main liquors.

Taste the drink. If the drink isn't to your taste, you'll know the measured dash is too much or too little. Remake the drink using less bitters or more bitters until you find the perfect amount.
