When you put a strawberry in dry ice, the extremely cold temperature of the dry ice (-109.3 degrees Celsius) causes the strawberry to freeze very rapidly. This process is known as flash freezing and it helps to preserve the strawberry's shape, colour, and flavour. The strawberry will also become incredibly hard and brittle due to the low temperature. If you were to drop the frozen strawberry onto a hard surface, it would likely shatter into many pieces. As the strawberry warms up, the ice crystals within the fruit begin to melt and the strawberry will gradually return to its original state.
