What are white freestone peaches?

White freestone peaches are a variety of peach with pale orange or yellow flesh that separates easily from the pit of the stone, known as freestone because of this separation. When picked when full red-ripe these white-fleshed peaches have an incredible depth of rich sweet peach-honey with an added note of rose flavor in their bouquet.

The main types are either yellow- or white-fleshed. Peaches typically have a delicate white pulp flesh which can be firm if picked early, or it turns softer and mushier when ripe and sweet.
