Sage Jelly with Cider Ingredients:
For the Sage Jelly:
- 6 cups fresh sage leaves, packed
- 3 cups water
- 2 cups sugar
- 1/4 cup lemon juice
- 1 tablespoon powdered fruit pectin
For the Cider Syrup:
- 2 cups apple cider
- 1/2 cup sugar
Instructions:
To make the Sage Jelly:
1. Wash the sage leaves thoroughly and pat dry.
2. In a large saucepan, combine the sage leaves and water. Bring to a boil over medium heat, then reduce heat and simmer for 10 minutes.
3. Strain the mixture through a fine mesh sieve into a large bowl. Discard the solids.
4. Add the sugar, lemon juice, and powdered fruit pectin to the bowl. Bring to a boil over medium heat, stirring constantly.
5. Boil for 1 minute, then remove from heat and skim off any foam.
6. Ladle the jelly into sterilized jars and seal tightly. Let cool completely before storing in a cool, dark place.
To make the Cider Syrup:
1. In a saucepan, combine the apple cider and sugar. Bring to a boil over medium heat, stirring constantly until the sugar has dissolved.
2. Reduce heat and simmer for 5 minutes, or until the syrup has thickened slightly.
3. Remove from heat and let cool completely before using.
To Serve:
1. Place a spoonful of sage jelly in a serving bowl.
2. Drizzle with some cider syrup.
3. Enjoy!
