What are the grades of olive oil?

Extra virgin olive oil (EVOO): This is the highest grade of olive oil, made from the first cold pressing of the olives. It has a low acidity level and a fruity flavor.

Virgin olive oil: This is also made from the first cold pressing of the olives, but it has a slightly higher acidity level than extra virgin olive oil. It still has a fruity flavor, but it may be slightly bitter.

Pure olive oil: This is a blend of refined olive oil and virgin olive oil. It has a lower acidity level than virgin olive oil, but it may not have as much flavor.

Olive oil: This is the lowest grade of olive oil. It is made from a blend of refined olive oil and virgin olive oil, but it may also contain some pomace oil. It has the lowest acidity level, but it may also have the least flavor.

Pomace olive oil: This is made from the pulp that is left over after the olives have been pressed for extra virgin, virgin, and pure olive oil. It has a high acidity level and a bland flavor.
