Ingredients:
- 1 can (21 ounces) peach pie filling
- 1 cup all-purpose flour
- 1/2 cup sugar
- 1/2 cup (1 stick) unsalted butter, cold and cut into small pieces
- 1/4 teaspoon salt
- 2 Pillsbury pie crusts
Instructions:
1. Preheat the oven to 375 degrees Fahrenheit (190 degrees Celsius).
2. In a large bowl, combine the flour, sugar, and salt. Use a pastry cutter or two knives to cut in the butter until the mixture resembles coarse crumbs.
3. Gradually add 6-7 tablespoons of cold water, 1 tablespoon at a time, and mix until the dough just comes together. Be careful not to overmix.
4. Divide the dough in half and shape each half into a ball. Wrap in plastic wrap and refrigerate for at least 30 minutes.
5. Roll out one of the pie crusts on a lightly floured surface to a 12-inch circle. Transfer the dough to a 9-inch pie plate and trim the edges.

7. Roll out the second pie crust to a 12-inch circle. Place the dough on top of the filling and trim the edges. Fold the edges under and crimp to seal.
