Savory Mille-Feuille with Roasted Vegetables and Goat Cheese
This recipe takes the classic pastry and transforms it into a delicious savory dish perfect for a special occasion or a light lunch.

Ingredients:
For the pastry:
* 2 cups all-purpose flour
* 1 tsp salt
* 1 cup (2 sticks) unsalted butter, chilled and cut into cubes
* 1/2 cup ice water
For the filling:
* 1 lb mixed vegetables (such as zucchini, bell peppers, onions, mushrooms, asparagus)
* 1 tbsp olive oil
* Salt and pepper to taste
* 1/2 cup goat cheese, crumbled
* 1/4 cup fresh herbs (such as thyme, rosemary, or basil), chopped
* 1/4 cup grated Parmesan cheese
Instructions:
1. Make the pastry:
* In a large bowl, whisk together the flour and salt.
* Add the chilled butter cubes and use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.
* Gradually add the ice water, mixing with a fork, until the dough comes together.
* Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
2. Prepare the filling:
* Preheat the oven to 400°F (200°C).
* Toss the vegetables with olive oil, salt, and pepper. Spread them on a baking sheet and roast for 25-30 minutes, or until tender and slightly browned.
* Meanwhile, in a small bowl, combine the goat cheese, herbs, and Parmesan cheese.
3. Assemble the mille-feuille:
* Divide the dough into 3 equal portions. Roll out each portion on a lightly floured surface into a 12x10 inch rectangle.
* Place one sheet of pastry on a baking sheet lined with parchment paper. Brush with a thin layer of melted butter and top with another pastry sheet. Repeat with the last sheet of pastry.
* Bake for 15-20 minutes, or until golden brown and cooked through.
* Remove from the oven and cool completely.
4. Assemble and serve:
* Once cool, carefully cut the pastry stack in half horizontally to create two layers.
* Spread the goat cheese mixture evenly over one layer of pastry.
* Top with the roasted vegetables.
* Place the other pastry layer on top.
* Cut into squares or rectangles and serve warm.
Tips:
* To make the dough more easily, you can use a food processor.
* For a richer flavor, use a mixture of butter and olive oil for the pastry dough.
* Feel free to experiment with different vegetables and cheeses for the filling.
* For an extra crispy layer, brush the pastry with beaten egg before baking.
