How do you make Bordeaux cherries?

Ingredients:

- 1 pound sweet cherries, pitted

- 1 cup sugar

- 1/2 cup water

- 1/4 cup red wine vinegar

- 1/2 teaspoon ground cinnamon

- 1/4 teaspoon ground cloves

- 1/8 teaspoon salt

Instructions:

1. In a medium saucepan, combine the cherries, sugar, water, vinegar, cinnamon, cloves, and salt.

2. Bring to a boil over medium heat, stirring occasionally.

3. Reduce heat to low and simmer for 30 minutes, or until the cherries are softened and the sauce has thickened.

4. Remove from heat and let cool completely.

5. Store the cherries in a sealed container in the refrigerator for up to 2 weeks.

Tips:

- If you don't have time to pit the cherries, you can buy them already pitted.

- You can use any type of red wine vinegar, but a fruity vinegar, such as raspberry vinegar, will add a nice flavor to the cherries.

- If you don't have ground cinnamon or cloves, you can use whole spices. Just add them to the saucepan with the other ingredients and strain the sauce before serving.

- Bordeaux cherries are a versatile fruit that can be used in a variety of desserts, including pies, tarts, and cobblers. They can also be served on their own as a snack or appetizer.
