How do you make guyanese fuge?
Ingredients:
- 2 cups of split yellow peas
- 1 cup of cooked rice
- 1 cup of coconut milk
- 1 cup of chicken or vegetable stock
- 2 tablespoons of vegetable oil
- 2 cloves of garlic, minced
- 1/2 teaspoon of ground cumin
- 1/2 teaspoon of ground coriander
- 1 teaspoon of turmeric powder
- 1 teaspoon of red pepper flakes
- Salt to taste
- Black pepper to taste
Instructions:
1. In a large pot, heat the oil over medium heat.
2. Add the garlic and cook until fragrant, about 1 minute.
3. Add the cumin, coriander, turmeric, and red pepper flakes and cook for 1 minute more, stirring constantly.
4. Add the split peas, rice, chicken or vegetable stock, and coconut milk and bring to a boil.
5. Reduce heat to low, cover, and simmer for 20 minutes or until the peas are cooked and the rice is tender.
6. Season with salt and pepper to taste and serve hot.
