You absolutely can use fresh sticks of ground cinnamon in cookies! Here's how:
Method:
1. Grind the cinnamon: Use a spice grinder, mortar and pestle, or even a coffee grinder (just make sure to clean it thoroughly afterward). Grind the sticks until you have a fine powder.
2. Measure and use: Use the ground cinnamon in your cookie recipe as directed.

* Fresh is best: Freshly ground cinnamon has a brighter, more intense flavor than pre-ground cinnamon.
