Ingredients:
- 1 cup rolled oats
- 1 cup all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 cup (1 stick) unsalted butter, softened
- 3/4 cup packed light brown sugar
- 3/4 cup granulated sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1/2 cup raisins (optional)
Instructions:
1. Preheat Oven: Preheat your oven to 375°F (190°C).
2. Prepare the Baking Sheet: Line a baking sheet with parchment paper or silicone baking mats.
3. Combine Dry Ingredients: In a medium mixing bowl, whisk together the rolled oats, flour, baking soda, cinnamon, and salt until well combined.
4. Cream Butter and Sugars: In a separate larger mixing bowl, cream the softened butter, brown sugar, and granulated sugar together until light and fluffy.
5. Add Egg and Vanilla: Beat in the egg and vanilla extract until combined.
6. Add Dry Ingredients: Gradually add the dry ingredients mixture to the wet ingredients and mix until just combined. Do not overmix.
7. Add Raisins (Optional): If using, stir in the raisins at this stage.
8. Scoop and Shape Dough: Use a cookie scoop or a spoon to drop the cookie dough onto the prepared baking sheet, spacing them about 2 inches apart. Slightly flatten each ball of dough with your fingers.
9. Bake: Bake the oatmeal cookies in the preheated oven for 10-12 minutes or until the edges are golden brown and the centers are set.
10. Cool on Wire Rack: Allow the cookies to cool on the baking sheet for a couple of minutes before transferring them to a wire rack to cool completely.
