Lebkuchen _(makes about 5 dozen cookies)_

Ingredients:

- 250g (1 cup) all-purpose flour

- 120g (1/2 cup) sugar

- 1 teaspoon ground cinnamon

- ½ teaspoon ground cloves

- ½ teaspoon ground ginger

- 1/4 teaspoon freshly grated nutmeg

- 2 teaspoons baking powder

- ½ teaspoon baking soda

- 2 large eggs

- 85g (6 tablespoons) unsalted butter, melted and cooled

- 2 tablespoons honey

For glazing:

- 200 g (7 ounces) dark chocolate

- 1 tablespoon butter

Method:

1. In a large bowl, whisk together the flour, sugar, cinnamon, cloves, ginger, and nutmeg.

2. In a separate bowl, whisk together the eggs, melted butter, and honey.

3. Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.

4. Cover the dough with plastic wrap and refrigerate for at least 2 hours, or overnight.

5. Preheat the oven to 175'C or 350'F.

6. Line a baking sheet with parchment paper.

7. Divide the dough into 2 parts and roll out one part into ¼ inch (0,5 cm) thickness.

8. Using a cookie cutter, cut out gingerbread men (or your favorite shapes) and place them on the prepared baking sheet.

9. Repeat with the remaining dough.

10. Bake the cookies for 8-10 minutes, or until the edges are just starting to brown.

11. Allow the cookies to cool completely on the baking sheet.

12. Meanwhile, prepare the glaze by melting the chocolate and butter in a microwave-safe bowl on low power, stirring until smooth.

13. Dip the top of each cookie into the glaze and allow the excess to drip off.

14. Place the cookies on a cooling rack to let the glaze set.
