Is caramel and melted sugar the same thing?
Caramel and melted sugar are not the same thing. Melted sugar is simply sugar that has been heated until it liquefies. Caramel is created when melted sugar is heated even further until it reaches a specific color and flavor profile. The chemical process of caramelization occurs, resulting in the browning and deeper, more complex flavors characteristic of caramel.
