How do you Make tradittional rice candy?
Making traditional rice candy requires careful preparation and cooking techniques. Here's a general recipe for creating delicious rice candy:
Ingredients:
* 2 cups glutinous rice flour
* 1 1/2 cups white sugar
* 1 cup brown sugar
* 1/2 cup coconut milk
* 1/4 cup water
* A pinch of salt
* Oil (for greasing the mold)
Instructions:
1. Preparing the Rice Flour:
- In a large bowl, mix the glutinous rice flour with 1 cup of water. Gradually add more water if needed until the flour forms a smooth and slightly sticky dough.
- Cover the dough with a damp cloth and let it rest for at least 30 minutes.
2. Cooking the Sugar Syrup:
- In a saucepan, combine the white sugar, brown sugar, coconut milk, and water. Bring the mixture to a boil over medium heat, stirring constantly.
- Continue cooking and stirring until the sugar has dissolved and the syrup has thickened (about 3-5 minutes). Remove the saucepan from the heat and let it cool slightly.
3. Mixing the Ingredients:
- Add the slightly cooled sugar syrup to the glutinous rice flour dough. Mix well until the dough absorbs the syrup and forms a cohesive mass.
- Add a pinch of salt and mix again to distribute it evenly.
4. Steaming the Rice Candy:
- Prepare a steamer by filling a pot with a few inches of water and bringing it to a boil. Grease a heat-resistant mold (traditionally, banana leaves are used) with some oil.
- Transfer the rice candy dough into the greased mold and steam it over boiling water for approximately 45 minutes to 1 hour, or until the dough becomes translucent and firm.
5. Cooling and Shaping:
- After steaming, remove the mold from the steamer and let it cool down for a few minutes. If using banana leaves, carefully unwrap the rice candy.
- Transfer the warm rice candy onto a clean and lightly oiled surface. Cut it into desired shapes while it's still pliable, such as rectangles, squares, or diamonds.
6. Drying and Storing:
- Place the cut rice candy pieces on a drying rack or tray, ensuring they don't touch each other.
- Leave the rice candy to dry in a warm place until it hardens and becomes chewy (usually a day or two).
- Store the dried rice candy in an airtight container at room temperature.
Enjoy your homemade traditional rice candy as a sweet snack or share it with loved ones!
