How do you get candy to harden?
To harden candy, there are a few different methods you can use:
1. Sugar syrup:
- Prepare a simple sugar syrup by boiling equal parts of sugar and water until the sugar dissolves.
- Bring the syrup to a higher temperature. Once it reaches around 300°F (150°C), it will start to caramelize and harden as it cools.
2. Isomalt:
- Isomalt is a sugar substitute that hardens when dissolved in water and heated to a high temperature.
- Mix equal parts of isomalt and water in a saucepan, boil until dissolved, then use it similar to hardened sugar syrup.
