Ingredients:
- 1 3/4 cups all-purpose flour
- 1 1/2 cups sugar
- 3/4 cup unsweetened cocoa powder
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 1/2 teaspoons salt
- 2 cups boiling water
- 1/2 cup vegetable oil
- 2 eggs
- 1 egg yolk
- 2 teaspoons vanilla extract
Instructions:
1. Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius). Grease and flour two 9-inch round cake pans.
2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
3. In a separate bowl, whisk together the boiling water and vegetable oil until the oil is well incorporated.
4. In another bowl, whisk together the eggs, egg yolk, and vanilla extract.
5. Add the wet ingredients (oil mixture and egg mixture) to the dry ingredients (flour mixture) and mix until just combined. Do not overmix.
6. Pour the batter evenly into the prepared cake pans.
7. Bake for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
8. Let the cakes cool completely in the pans before frosting and serving.
