How does salt affect pinto beans?
Salting beans before cooking can:
- Make beans tougher because it toughens proteins. Some chefs recommend avoiding salt altogether until the beans are nearly completely tender.
- Interfere with softening starches by reducing the beans' ability to absorb water. Beans can cook for extended periods without significant softening as salt water can inhibit them from fully rehydrating.
