It is actually not recommended to leave lime seeds in fruit juice. Lime seeds, like the seeds of other citrus fruits, are quite bitter. Although they are not toxic, they can drastically alter the taste of the juice. As such, it is highly advisable to remove lime seeds before consuming the juice.
Lime seeds do not necessarily become easier to remove after mixing the juice with water. In fact, they may even become more difficult to remove as they can get dispersed throughout the water, making it harder to strain them out.
