How do you make apricot preserve from canned apricots?

Making Apricot Preserve from Canned Apricots

Yield: About 3 cups

Prep time: 15 minutes

Cook time: 30-45 minutes

Ingredients:

* 2 (14.5 ounce) cans of apricot halves, drained

* 1 1/2 cups granulated sugar

* 1/4 cup lemon juice

* 1/4 teaspoon ground cinnamon (optional)

Equipment:

* Large saucepan

* Measuring cups and spoons

* Wooden spoon

* Skimmer

* Canning jars (optional)

Instructions:

1. Prepare the apricots: Drain the apricot halves and discard the juice. Place the apricots in a large saucepan.

2. Combine ingredients: Add the sugar, lemon juice, and cinnamon (if using) to the saucepan. Stir gently to combine.

3. Simmer and cook: Bring the mixture to a boil over medium-high heat, stirring frequently to dissolve the sugar. Reduce heat to low and simmer for 30-45 minutes, or until the mixture has thickened and the apricots are tender.

4. Test for doneness: To test if the preserve is ready, place a small amount on a chilled plate. If the preserve sets up and doesn't run, it's done.

5. Skim off foam: Skim off any foam that rises to the surface during cooking.

6. Hot pack or refrigerate: For long-term storage, hot pack the preserve in sterilized jars. Leave ½ inch headspace, wipe rims, and seal with lids. Process in a boiling water bath for 10 minutes. Alternatively, cool the preserve completely and refrigerate for up to 2 weeks.

Tips:

* For a smoother preserve, use a potato masher to break down some of the apricots before simmering.

* If you like a more intense apricot flavor, add a few drops of almond extract.

* For a variation, add a splash of brandy or rum to the preserve.

* This recipe can be easily doubled or tripled.
