What to Do With Zucchini That's Too Big?
A zucchini that's too big can present a challenge to even the creative cook. Zucchini that grow to an exceptional size are often drier and less flavorful, so they don't lend themselves to the quick sauté that younger squashes do. Even so, several methods do work with zucchini of gargantuan proportions.
Stuffed Zucchini

The most common way to use a giant zucchini is to stuff it. A stuffed zucchini makes an appealing presentation, and much of the drier flesh will be scooped out to make room for the stuffing. A traditional stuffing mixture usually includes ground meat, tomatoes and onions, but a web search for 'stuffed zucchini recipes' will result in many unusual versions, including some that will appeal to vegetarians.
Grated Zucchini

Try out some creative zucchini recipes -- there are many online -- and sneak some grated zucchini into a dish that wouldn't normally incorporate it. Grated zucchini can add moisture to breads and other baked goods, and is useful in adding substance and nutrition to sauces. For convenience, grate zucchini and freeze it until you're ready to use it.
