How Long Are Dried Mushrooms Good For?
As mushrooms are approximately 85 percent water, a pound of regular mushrooms will equal just a few ounces of dried mushrooms. Mushrooms are often dried for convenience, allowing seasonal mushrooms to be available year-round.

Once opened, dried mushrooms are good for 10 to 12 months. Store mushrooms in a clean, dry and air-tight container. Check dried mushrooms periodically for mold, dampness or any discolorations. Dried mushrooms can be stored in the refrigerator on in a cupboard or pantry.
Uses

Dried mushrooms can be used in virtually any dish that calls for mushrooms. Reconstitute dried mushrooms by covering with water in a small saucepan, then simmering for 25 minutes. Both the reconstituted mushrooms and their cooking liquid make rich, flavorful additions to soups, stews, stuffings and sauces.

While any mushroom can be dried, the most common varieties of dried mushrooms are chanterelles, morels, creminis, shiitakes, and porcinis. Prices can range from a few dollars per package to upwards of several thousand dollars for rare species of truffles.
