How to Cut Scallions Lengthwise (10 Steps)
Scallions, also known as green onions, have a long and thin base that has not matured into a bulb. The top of the scallion contains straight green stalks. The stalks and white flesh are both edible. They have a mild flavor similar to onions that enhances the taste of dishes. Slicing the scallions lengthwise allows you to cut them into small pieces. Follow the steps below to properly cut scallions lengthwise.
Things You'll Need
- Chef's knife or clever
Chopped Scallions

Rinse the scallions under cool running water to remove dirt and debris.

Slice the root end from the scallions with a sharp chef's knife.

Cut the top 1 inch from the scallion greens.

Separate the green and white sections by slicing them crosswise where they meet.

Slice the scallions in half lengthwise. Remove the rough outer skin.

Chop the scallion whites and greens into thin slices crosswise. The size of the slices will depend on your personal preference.

Wash the scallions under cool running water.

Remove the root end from the scallions with a chef's knife or clever.

Slice the scallion into thirds with a sharp knife to create small slithers. Cut each section 1/4-inch thick and around 2 inches in length for best results.

Cut each sliver into smaller 1/8-inch slices if you desire.
