How to Freeze Dewberries (4 Steps)

Dewberries, a relative of blackberries that grow on thorny brambles, have a sweetly tart flavor that shines in crumbles, pies and fruit desserts. A fully ripe dewberry is almost black, although it reflects the color of the sky when covered in morning dew. Dewberries ripen and are available in late spring and early summer, so they are a fleeting seasonal treat. Fortunately, you can freeze an overabundance for later use so you can enjoy them year-round.

Things You'll Need

  • Measuring cup or pitcher
  • Sugar
  • Spoon
  • Freezer storage container

Instructions

  1. Wash the dewberries in cool water. Sort the berries, removing any that are damaged or bruised. Only freeze dewberries in peak condition.

  2. Fill a large measuring cup or pitcher with 4 cups of lukewarm tap water. Stir in 3 cups of sugar until it dissolves. Cool the sugar syrup in the refrigerator.

  3. Fill a freezer-safe storage container with berries to within 1 inch of the rim. Pour the syrup into the container until the fruit is just covered and 1 inch of headspace remains so the fruit can expand during freezing.

  4. Label and date the container. Store it in a 0-degree Fahrenheit freezer for up to one year. Thaw in the refrigerator before use.
