How to Mix Clear Gelatin
Colorful gelatin desserts are staple childhood favorites in many homes, with their jewel-like hues and bold flavors. They're very easy to mix and are usually just dissolved in hot water and then stirred into an equal quantity of cold water. Using unflavored or clear gelatin for more sophisticated preparations takes a few more steps, though it's still easy, even for novices.

Measure one-quarter cup of cold water into a small bowl or measuring cup. Sprinkle your envelope of clear gelatin evenly over the water.

Rest the gelatin for 1 to 3 minutes until the granules of powdered gelatin are fully hydrated and swollen.

Heat the cup of softened gelatin in a pan of hot water or in your microwave until the gelatin has melted completely. You might need to stir it occasionally to ensure that all the crystals dissolve. Add the melted gelatin in a thin stream to whipped cream, custards or other dessert preparations to thicken and stabilize them so they'll hold their shape.

Thicken broth or fruit juices for gelled desserts through an alternative method. Once the gelatin granules have softened or "bloomed," whisk the mixture into another one-quarter cup of hot water or other liquid until it's dissolved. Stir the dissolved gelatin into the remaining liquid, then pour into a mold and chill until set.
