Good Places to Store Cabbages
Keeping cabbage cool and limiting its air exposure are key to to keeping it fresh. Store cabbage in your refrigerator or other cold storage space to enjoy it throughout the winter. For longer storage, freeze cabbage for up to 18 months when other cold storage space is unavailable.
Cabbage Storage Basics

Keeping cabbage cool is necessary for any prolonged storage, as it slows the cabbage's rate of respiration and helps to preserve its vitamin C content. Wrapping cabbage in plastic wrap helps to slow spoilage, as it keeps out mold and moisture, and slows air flow, which retards spoilage. Wrapping cabbage also helps it maintain its own moisture and prevent the cabbage from drying out during storage. As an alternative to wrapping cabbage in plastic, store cabbage in glass or plastic storage containers with tight-fitting lids in approximately the same size as the heads of cabbage you are storing.
Refrigerator

A refrigerator is one of the best places to store cabbage, though it may not always be possible based on the size of your harvest. Store wrapped cabbages in your crisper drawer for the best quality and longest storage. Use cut cabbage heads within two days of cutting, as the vitamin C quickly degrades after cutting. Handle cabbage for storing carefully to prevent bruising, which leads to decreased quality and vitamin content in cabbages.
Cold Storage

An unheated basement or other unheated storage spot works well for cabbage to last throughout a season. Trim off the loose outer leaves of cabbage and wrap the heads in plastic bags to prevent respiration. Place the cabbages in a cold storage area that maintains a cool temperature around 40 degrees Fahrenheit. To prevent pests, do not leave cabbages on the ground or in an unsecured area, such as an outdoor shed where animals may have access.
Freezer

To store cabbage up to 18 months, freezing it is the best option. To freeze, remove outer leaves and cut the cabbage into thin wedges. Blanch the wedges in boiling water for two minutes and then submerge them in ice water for at least two minutes, until they are cold. Drain well in a colander and pack the cabbage into freezer-safe containers or bags and freeze. While frozen cabbage will retain its quality for 18 months, when continuously frozen at 0 degrees Fahrenheit, it will be safe indefinitely.
