How do I Make Italian Green Bean Bundles?
Greens beans seasoned with classic Italian flavors and wrapped in the cured Italian ham, prosciutto, make an elegant side dish for special occasions. Parmesan cheese, garlic, parsley and other seasonings give the bundles a distinctly Italian-style flair. Italian green bean bundles can be cooked in the oven, on the stove top or on the grill, depending on your preference. If you're making more than just a few bundles, prepare them ahead of time and store them in the refrigerator so you can cook them quickly just before dinner is served.

- Green beans
- Large pot
- Salt
- Thinly sliced prosciutto

Trim the ends off of the greens beans and thoroughly rinse them in cold water.

Bring a large pot of salted water to a boil over high heat. Add the green beans and cook until just barely tender, about 3 to 5 minutes.

Drain the beans, then rinse them under cold running water to prevent them from overcooking. Pat dry.

Toss the green beans in a few tablespoons of olive oil and season with salt and pepper. To give the beans Italian-style flair, season them with dried herbs and spices such as parsley, basil, oregano, garlic powder, onion powder or an Italian seasoning blend. Alternately, you can toss the beans in Balsamic vinaigrette, red wine vinaigrette or Italian salad dressing, and allow them to marinate for an hour or so before making the bundles.

Divide the green beans into equal bundles. Lay out a slice of prosciutto and place one bundle of beans at the end of the prosciutto. Roll the beans over to wrap them tightly in the prosciutto. Repeat with the remaining green beans bundles.

Brush the bundles lightly with oil then sprinkle with fresh or dried herbs, such as parsley, oregano or basil.

Cook the bundles about 10 minutes in a 400-degree Fahrenheit oven, 5 minutes on the grill or in a pan over high heat. If you're cooking the bundles in a pan or on the grill, flip them over occasionally so they cook evenly. The bundles are done when the prosciutto is browned and the green beans are fully tender. Sprinkle the bundles with grated Parmesan cheese before serving, if desired.
