When you’re not sure what to do with ground hamburger, meatloaf is an easy American classic. Mix together ground beef, breadcrumbs, onion, eggs, parsley and ketchup. Add some coarsely chopped smoked bacon to liven up the flavor of the beef. For a spicy kick and a twist on this American classic, add some chipotle chiles to the mix. Or simply serve the meatloaf with barbecue sauce when it comes out of the oven. If you have frozen shredded hash browns, you can make potato cakes in no time. Simply mix together thawed hash browns with eggs and garlic and form into flat pancake-like shapes. The egg will help the hash browns hold together. Fry the cake on both sides until golden brown. For the meat sauce, cook the ground beef and add onion, mushroom, tomato paste and a little brown sugar. Serve the meat sauce on top of the potato cake with a dollop of sour cream.
