Can you fry fish with bread crumbs in olive oil?

Ingredients

* 2 (5 ounce) skinless, boneless white fish fillets (cod, flounder or sole filets work best for frying)

* Salt

* Black pepper

* 2 Large Eggs

* 1 cup dried breadcrumbs

* 2 tablespoons Parmesan Cheese

* 2 tablespoons all purpose flour

* Olive oil

* Lemon Wedges

Directions

1.) Place fish fillets between 2 pieces of parchment paper and pound gently with a meat mallet to 1/4 inch thickness.

2.) Season the fillets with salt and black pepper.

3.) Crack eggs into a shallow dish and beat lightly with a fork.

4.) Combine breadcrumbs, Parmesan cheese and flour in a separate shallow dish.

5.) Dip the fillets first into the egg and then into the bread crumb mixture, pressing down to help the crumbs stick.

6.) Heat olive oil in a large nonstick skillet over medium-high heat.

7.) Add fish fillets and cook for 2-3 minutes per side until the crust is golden brown and the fish is cooked all the way through.

8.) Serve with lemon wedges.
