When to change fryer oil?
There are a few ways to tell when it's time to change fryer oil:
1. Color: The oil should be a light, golden color. If it starts to turn dark brown, it's time to change it.
2. Smell: The oil should have a clean, neutral smell. If it starts to smell rancid or burnt, it's time to change it.
3. Taste: The oil should taste fresh and clean. If it starts to taste bitter or burnt, it's time to change it.
4. Smoke point: The smoke point is the temperature at which the oil starts to smoke. The higher the smoke point, the better. When the oil's smoke point starts to decrease, it's time to change it.
5. Foam: If you see foam forming on the surface of the oil, it's time to change it.
6. Particles: If you see particles floating in the oil, it's time to change it.
In general, you should change fryer oil every 8-12 hours of use, or more often if you're frying at high temperatures or using a lot of batter or breading.
