How to Use the KitchenAid Pasta Attachment
Making pasta can seem like a long and difficult process better left to professionals or devoted home cooks with years of experience. With automatic machines like the KitchenAid and its pasta attachment, pasta-making and the process of rolling it thin has been made easy. Nevertheless, there are a few things to keep in mind when using the attachment.

Connect the square protrusion of the pasta attachment into the metal gear in the front of the KitchenAid stand mixer. Some models have a flip-up lid covering the gear. For some mixers, there is a metal case covering over the gear. To access this gear, loosen the screw on top of the mixer and take out the case. Make sure the protrusion and gear are fully connected.

Orient the pasta attachment so the rolling cylinder is facing up. This should align the small groove in the pasta attachment with a hole in the mixer.

Tighten the plastic screw into the mixer so that the attachment is held firmly in place.

Turn on the mixer and set it at a low speed. The cylinders inside the attachment should be rolling inward.

Twist the attachment to its widest setting--in most cases this should be on setting "1." Roll out the pasta dough using a rolling pin to a thickness appropriate for feeding into the pasta attachment. This doesn't have to be too thin, but enough for the attachment to handle the dough without too much strain. Catch the pasta as it goes through the attachment.

As you run the dough through each time, incrementally increase the setting of the attachment, which brings the cylinders closer together and makes the pasta thinner. Do not jump from a small number to a much higher number. This process creates a sheet of dough ready for the pasta-cutting attachment.
