How do you pasteurize syrup?
Pasteurizing Syrup
Ingredients:
- Sugar
- Water
- 1/2 teaspoon cream of tartar per quart of syrup
Instructions:
1.) Combine the sugar and water in a large saucepan over medium heat. Bring to a boil, stirring occasionally.
2.) Reduce heat to low and simmer for 5 minutes, or until the sugar has dissolved.
3.) Add cream of tartar.
4.) Bring the syrup to a boil again, then immediately remove from heat.
5.) Let the syrup cool for a few minutes, then transfer it to a clean glass jar.
6.) Seal the jar with a lid and store in the refrigerator for up to 2 weeks.
Tips:
- To make a flavored syrup, add 1/2 cup of your favorite fruit puree, juice, or extract to the syrup before bringing it to a boil.
- You can also add spices like cinnamon or vanilla bean to the syrup for extra flavor.
- If you don't have cream of tartar, you can use 1/4 teaspoon of lemon juice or white vinegar per quart of syrup.
