How to Make Jerky on a Charcoal Grill
Jerky is a popular snack for those people on the go. Jerky doesn't need refrigeration or heating before you eat it. Many truckers, campers and road trippers prefer to have a stash of jerky as a high protein snack. With just a few ingredients and a grill, you can make your own jerky at home.
Things You'll Need
- Charcoal grill
- Charcoal
- Ingredients:
- Resealable bag
- 1 lb. flank steak, cut into long thin strips
- 1/2 cup Worcestershire sauce
- 1/2 cup tamari (aged soy sauce) or regular soy sauce
- 1/4 cup brown sugar
- 1 tbsp. garlic powder
- 1 tbsp. onion powder
- 1 tsp. smoked paprika
- 2 tsp. dried ground cayenne pepper
- 2 tsp. fresh ground black pepper

Mix all non-steak ingredients first in a resealable bag. Add the long, thin strips of steak into the bag of spices. Let the meat marinate overnight if possible.

Place your charcoal on 1 side of your grill. Light your charcoal. Let your charcoal burn down to a red glow or until they are hot embers.

Place your meat strips on a cookie sheet lined with foil. Cover the strips with another strip of foil. Place your cookie sheet with the marinated steak strips on the side of the grill without the embers in a single layer. Close the lid of your grill.

Control the temperature of the grill to keep your heat at about 150 degrees F. If the temperature gets too hot, spread the embers so they cool off in your grill.

Cook the meat for about 3 hours. Make sure the temperature remains at 150 degrees. Remove the foil and cook for another hour. After cooking, the meat should be dried out and ready to be cooled. Once cooled, it's ready to eat.
