How to Convert a Recipe for a Convection Oven
Convection ovens operate a little differently than conventional ovens. This results in the need to convert cooking times and temperatures. Convection ovens work by circulating hot air during the cooking process. Dishes are heated equally throughout at the same time. Conventional ovens often heat from the outside in. Because of this, convection ovens cook faster than conventional ovens.

Read the recipe card and locate the temperature the recipe is calling for. Subtract 25 degrees from that temperature, and then set your convection oven to preheat. For example, if the recipe calls for cooking at 350 degrees F in a conventional oven, you would set your convection oven for 325 degrees F.

Locate the cooking time on your recipe card. You will need to reduce that number by 25 percent to find your convection oven cooking time. So if the cooking time says one hour, you will cook it in your convection oven for 45 minutes.

Check on your dish about ten minutes before it is scheduled to be done in your convection oven. This should be done because not all ovens are exactly the same. Some cook faster than others. By checking your dish a few minutes ahead of time, you can save it from becoming too dry.
