How to Make Flapjacks Soft
Flapjacks, both American and British, are forgiving if they're slightly overcooked. If they turn out a little too stiff, wrap them in a couple layers of aluminum foil or put them in an airtight container for 3 or 4 minutes to steam them. To prevent firm flapjacks, don't make the batter too stiff; it should be slowly pourable but not glacial.
British Flapjacks

Substitute honey for sugar or use light-brown soft sugar instead of firm-packed brown sugar. British flapjacks stay soft about 5 days in an airtight container in the refrigerator. You can soften them by reheating them in a 225-degree-Fahrenheit oven for about 8 to 10 minutes before serving.
American Flapjacks

Fold 3 egg whites -- whipped to the soft-peak stage -- into the pancake batter. Cook the pancakes briefly on the bottom -- just enough to set the batter. Transfer the pancakes cooked-side-down to a baking sheet lined with parchment paper and bake them at 325 F until just finished, about 4 to 5 minutes.
