How to Cook Sugar Beets (9 Steps)

Sugar beets are a root vegetable with a high nutritional value. Beets are a source of carbohydrates, proteins and dietary fibers, and are rich in iron, calcium, folic acid and antioxidants. You can prepare many dishes with beets, from salads to soups and side dishes. Always look for fresh, firm and round beets that are deep-red in color. It's also best to cook with small or medium-sized beets. Before cooking, you need to clean the beets thoroughly to remove soil and any chemicals. Just scrub the beets with a vegetable brush and wash with water.

Boiling

  1. You do not need to peel the beets when boiling them. Cut off the roots, and cut the beet into small chunks.

  2. Place the beets in a pot of boiling water. Cook for 15 to 20 minutes or until tender. .

  3. Place the beets in cold water and remove the skins.

Roasting

  1. Preheat the oven to 350 F.

  2. Place the beets on a piece of aluminum foil and sprinkle with olive oil and any desired seasonings. Fold the top of the foil to form a tent and place on a baking sheet in the oven.

  3. Roast the beets for about 45 to 60 minutes or until tender. Let cool for about 10 minutes and then remove the skin. You also can roast the beets in a roasting pan covered with aluminum foil.

Sauteing

  1. Heat 1 tsp of extra virgin olive oil in a frying pan over medium heat.

  2. Add pre-peeled or chopped or diced beets to the pan. Shake or stir the beets frequently.

  3. Add a little water and cover the pan with a lid. Sauté for about 5 to 15 minutes.
