How to Smoke Zucchini (5 Steps)
For a nutritious side dish for your smoked ribs or steaks, zucchini is a tasty addition to a summer meal. The low-calorie summer squash is high in potassium and vitamins A and C. Zucchini is first rubbed with oil, then spices are added before it is smoked. The finished dish can be served with complementary sauces. Although grilling takes less time, smoking zucchini can produce a unique, flavorful result that can balance any barbecue menu.
Things You'll Need
- Smoker
- Zucchini
- Paring knife
- Spoon
- Olive oil
- Preferred Seasonings, such as salt and pepper or garlic (optional)
- Preferred sauce (optional)
Instructions

Preheat the smoker, according to the manufacturer's instructions. The internal temperature should reach 200- to 220-degrees Fahrenheit.

Rinse the zucchini and slice it lengthwise.

Drag a spoon along the center to remove the seeds.

Rub the zucchini all over with olive oil and sprinkle it with seasonings. Cilantro, parsley and scallions are excellent complements to smoked zucchini.

Place the zucchini in the smoker for one hour. Remove it from the smoker, and serve with sauce, if desired.
