How to Cook Chorizo in the Oven

Every culture seems to have its own form of sausage. Pork is the main ingredients in sausages, but some sausages include veal, chicken, beef, and other proteins, too. Chorizo is a spicy sausage that is Spanish in origin. Spanish chorizo, however, is dry cured and ready to eat, while Mexican chorizo is moist and typically grilled, boiled or roasted. Mexican chorizo, made with ingredients like cumin, coriander, cayenne pepper and other dried chilies, is a common fixture on Mexican restaurant menus. You can also make this tasty sausage at home in your oven.

Things You'll Need

  • Paper towel
  • Roasting pan with wire rack
  • Vegetable spray oil
  • Mexican chorizo sausages
  • Tongs
  • Large skillet
  • Instant-read thermometer

Instructions

  1. Preheat oven to 300 degrees Fahrenheit. Remove the chorizo sausages from the refrigerator and rinse them under cool running water. Pat the chorizo sausages dry using paper towel.

  2. Place a wire rack in a roasting pan and lightly coat the rack using spray vegetable oil. Place the chorizo sausages on the top of the wire rack.

  3. Place the chorizo sausages in the oven and cook for about 10 minutes. Flip the sausages using tongs and cook for another 10 minutes.

  4. Remove the roasting pan from the oven and turn the oven off. Spray a small amount of vegetable oil into a large skillet and heat it on medium-high heat.

  5. Add the chorizo sausages to the skillet. Cook the sausages on each side for about a minute to brown the sausages evenly all the way around. Check the internal temperature of the sausages using an instant-read thermometer; the sausages are ready to eat once the internal temperature reaches 150 F and there is no longer any pink visible.
