How to Make a Pickle Fan Garnish (6 Steps)
Garnishing, according to the U.S. Army Quartermaster Corps, is an art. Fortunately, you do not have to be an artist to create interesting garnishes. You also do not need any special equipment, because most basic garnishes require little more than a few cuts with a sharp paring knife. Pickle fans are simple to make, but they add a touch of elegance to everything from cheese plates and cold-cut platters to an antipasto salad or a selection of burger toppings.

Pat the whole pickles dry with paper towels to make them easier to hold.

Make a vertical slice in the side of a pickle from the top down, stopping 1/8 to 1/4 inch from the bottom.

Start at the top again, a little bit inside of the first slice, and make a second cut. Make sure to stop at the same place as the first cut.

Continue making evenly spaced, parallel vertical slices from top to bottom across the width of the pickle.

Holding the pickle in both hands, gently spread the slices out to the sides much the same way you would when fanning a hand of playing cards.

Arrange the pickle fan on the plate it is meant to garnish. Place it so it is not only pleasing to the eye, but not too difficult to pick up, since the best garnishes are the ones that can be eaten.
