How to Cook With a Tapenade (3 Steps)

Tapenade, which originates in France, is a rough paste composed of olives, capers, anchovies and olive oil.   • Grated Parmesan cheese
  • Puff pastry

  • Chicken or fish pieces
  • Rimmed cookie sheet

Instructions

  1. For a tasty starter, spread tapenade over a sheet of puff pastry and sprinkle it with grated Parmesan cheese or other hard, pungent cheese. Roll up the puff pastry beginning at one long edge into a tight log and refrigerate it or 20 minutes. Cut the log into 1/2-inch sections and bake on a cookie sheet at 400 degrees Fahrenheit for 10 minutes.

  2. For a zesty main dish, place pieces of chicken or fish on a rack on a rimmed cookie sheet with a teaspoon of tapenade on top of each piece. Bake the chicken at 350 degrees Fahrenheit for 60 minutes. Bake the fish at 350 degrees Fahrenheit for 20 minutes.

  3. For an Italian interpretation, throw pasta sauce ingredients into a saucepan. Add 1 or more tablespoons of tapenade to taste and cook the combined ingredients at low heat for 20 minutes. Pour the sauce over cooked pasta.
