How to Grill Zucchini Squash Squares (4 Steps)

Grilling zucchini helps to enhance the flavor of this mild-tasting vegetable, which you can slice in a number of ways, depending on how you wish to serve it. For bite-sized zucchini squares, the squash need to be sliced lengthwise before grilling, then divided into even-sized squares, trimming off the rounded edges. You can use the grilled zucchini squares as appetizers, topping the squares with mozzarella cheese and olives, as miniature sandwiches or enjoy them lightly seasoned as is.

  • Sharp chef's knife
  • Cutting board
  • Olive oil
  • Sea salt

Instructions

  1. Prepare your grill for medium-high heat. Brush the grill grates clean if necessary with a grill brush once the grill is hot.

  2. Slice zucchini lengthwise into slices about a 1/2 inch thick with a sharp chef's knife on a clean cutting board. Brush the zucchini with olive oil on both sides and sprinkle lightly with salt.

  3. Grill the zucchini slices for about 3 to 4 minutes on each side, until the the zucchini is tender and grill marks form on the zucchini.

  4. Remove the zucchini from the grill and cut them into even sized squares, about 1 inch thick. Enjoy the grilled zucchini squares as is, or use them as the base for an appetizer.
