How to Lay Ganache onto Cake (4 Steps)
Covering a plain cake with a layer of smooth and shiny chocolate ganache is sure to impress and easy to do. Ganache is simple, requiring only two ingredients, chocolate and heavy cream, heated and mixed together to create a decadent chocolate that can be made as thick or thin as you would like, depending on the amount of cream you use. To lay a shiny layer of ganache over cake, use two parts chocolate to one part cream so that the ganache is pourable, but still thick enough to firmly set.
Things You'll Need
- Wire rack
- Baking sheet
- Prepared ganache
- Flat-edge spatula
Instructions

Place a cooled cake on a wire rack set above a baking sheet. Brush off any loose crumbs from the surface and sides.

Spread a thin layer of the prepared ganache onto the surface and sides of the cake with a flat-edge spatula, creating a crumb coat, which keeps crumbs from getting into the outer layer of ganache. Put the cake in the refrigerator for about five minutes to set the crumb coating.

Remove the cake from the refrigerator. Pour the remaining ganache onto the center of the cake surface. Use the flat-edge spatula to spread the ganache all over the top of the cake and pushing it over the sides. Continue spreading with the spatula across the surface and sides to ensure the ganache lays evenly over the cake.

Let the ganache set on the cake at room temperature before transferring to a cake platter and serving.
