Can you substitute margerine instead of oil for searing?
No. Oil has a higher smoke point than margarine. Margarine has a higher water content than oil and will splatter when heated to high temperatures. The water in margarine will also cause it to burn at lower temperatures than oil. It is not recommended to use margarine for searing.
